Texture properties of farmed rainbow trout \+i\(Oncorhynchus mykiss\-i\): effects of diet, muscle fat content and time of storage on ice
The effects of fat content in the feed and in fish muscle, and storage time on ice, on the gaping, texture, pH and muscle autolysis were investigated. Compression tests were used to measure texture.
