Summary:Supersaturation is a fundamental variable in the crystallization processes in the chemical and food industry. This variable cannot be measured online, for this reason a state estimator is proposed to approximate its value in the single effect evaporators of the sugar industry. The designed estimator is based on the use of artificial neural networks and validated by comparing the approximate variable with the theoretical data of the process. The results provide a satisfactory estimate, presenting an average error of 0.1%, acceptable for the process.
