Summary:Residues of pesticides used in viticulture may undergo various forms of degradation in the must. Numerous works have reported on the effects of such pesticides on fermentation yeasts but only a few can be found regarding the effects of yeasts on pesticides. This paper reports on investigations into the action of three wine yeasts on Nuarimol, a widely used viticultural pesticide.
