Summary:In this paper, polysaccharides contents of 24 jujube cultivars in flesh, fruit skin, leaves and stems in white-maturing, crisp-maturing and complete-maturing periods were determined by phenol-sulfuric acid method and data were analyzed by SAS. The results showed that there was a very significant difference for the polysaccharides content in different organs. The highest content was in the flesh, averaging 124.06 mg/g, while the lowest in the stem, averaging 8.63 mg/g. The polysaccharide contents in fruits also differed with developing periods, the highest content occurred in the complete-maturing period, averaging 131.49 mg/g, while the lowest in the white-maturing period, averaging 108.48 mg/g. There was a significant difference for the polysaccharides content among different cultivars. According to the average of polysaccharides content in fruits (including flesh and skin) of different growing periods, the highest content was in the ‘Taiguhupingzao’ jujube which was 134.17 mg/g, while the lowest in ‘Nanjingyazao’ jujube, only 69.53 mg/g. With increasing maturity of the fruit, the polysaccharides content in flesh, fruit skin and leaves also went up, and it reached the highest content in complete-maturing period. The content in complete-maturing flesh was distinctly higher than that in other growing periods and other organs. There was a small difference for polysaccharides content of the same cultivar in different regions, while the difference was rather large in different years, usually between 2 to 4 times. Yet the content diversification in different cultivars and growing periods had the same rule in different years.
