Summary:The contract catering sector of the UK hospitality industry has expanded rapidly in scale and scope, yet few contemporary hospitality researchers acknowledge the existence of this significant market sector. This paper examines both commercial and public sections of contract catering in the UK. The paper proceeds to discuss the development of contract catering management in relation to facilities management and branded outlets and its effect on current training strategies. Finally the paper considers the future role of the UK contract catering sector within an international context.
