In this grant project, dietitians and nurses created a book with basic, carbohydrate-controlled recipes that are organized by color codes that designate mealtimes. In addition, the material contains information on treating high/low blood sugar, food-label reading, basic carbohydrate substitution lists and a grocery shopping list, all organized in an easy-to-read format that will help address their health issues appropriately. The findings were analyzed to demonstrate knowledge gained by the participants based on the utilization of the book for their daily health management. |
